Definitely matte, color does not matter.

You can paint it any colour, i used spray gloss on my 90cm dish, just don't use metallic paint .

The matt color is important on the dish to prevent the LNB from being destroyed when the sun reaches the position of the satellite. When using a glossy color, this can also happen:
