Going by what you have described, it's not possible.
You have not stated which tuners you have. Or which satellite receiver.
Every tuner with independent access to a satellite will allow you to access a transponder. All of the channels on that one transponder can be viewed/streamed/recorded at the same time.
A "Diseqc switch" as the name implies "switches". You can switch between satellites. However you can only access one satellite at a time. Depending on your receiver and tuners, another cable and switch will be better for you.

But when I had sky the guy said to record 3 channels and watch 1 you need to combine the feeds into one cable and he asked how many feeds I wanted so I asked for 8 it was from the communal dish and I had two cables going into my box both with 4 feeds so I could watch 1 record 7
For Enigma2, when it comes to recordings, it is not channels you have to count, it is transponders. Yes, the end user does not really count transponders.
Which receiver do you have please?
How many wires do you have coming to your receiver from the dish(es)/switch(es)? ( I want to clarify your "two cables with 4 feeds" comment)
What do you mean by "feeds"
Are the LNBs universal, quattro, wideband or unicable?
You say that this is a communal dish. Do you have access to alter wiring?
Communal setups use satellite switches, they do not use separate diseqc switches. How exactly are you combining these setups?
Maybe you can draw a diagram. A shotgun cable is two cables.
I saw on the communal dish they sat guy cascaded combiners to two feeds it uses quite a few combiners

On the assumption that you:
You can only access two transponders. All of the channels on those two transponder can be viewed/streamed/recorded at the same time.
To see the channels on the transponder:
Do not use the EPG screens, use the channel selection screen.
Up (next to OK) > Green (satellites/extended/simple) > Current Transponder
